We're Engaged!

Doug and I got engaged last night! Here's the story...

2 years and 3 months ago we went on our first date to El Rey Del Sol on 14th st. We sat outside at picnic tables and over one too many margaritas, I knew he was definitely a keeper. Sadly, the spot shut down shortly after and we were never able to return. Last night we were supposedly headed to dinner with Doug's cousins. He convinced me to make a pit stop at a bar called Crooked Knife for a drink first (still clueless at this point).

As we walked in, Doug said "oh by the way, this used to be the Mexican place we went to on our first date." Hmmm... We walked to the back and outside where I finally realized what was going on. I was so caught up in the moment and crying that I forgot to take many photos, but it was the most romantic thing I've ever walked into. There were tiny candles lining the entire patio and around 1 small table surrounded with rose petals. There was a bottle of champagne, two candles (D and A), orchids and of course margaritas:)

The rest was filled with sweet words and lots of happy tears. We listened to our favorite songs and laughed about all the amazing memories that brought us to that moment. (and of course a few Bachelorette jokes from me).

A bit later, we were told there was "a car out front waiting for us." A little confused, we walked to the front of the restaurant and were surprised by many of our closest family members. The drinks started to flow and that's really all I remember... JK! It was such a great night and so special to celebrate with so many people we love. Thank you to our families and all the friends who were able to make it last minute! It was a night I will never forget and the start of many more good times to come. I have to credit everyone who knew for keeping this a secret and being part of such a magical night. And thank you to the guys at Crooked Knife for helping set this up. I hear you were incredible!

And Doug... you are one of a kind. Everyone sees it and I've always known it. It's hard to find the words to express how much last night meant to me. I love you and cannot wait to spend forever together ;)

-ps I LOVEEEE my ring. Every time I look at it, it's a reminder of how happy I feel.

Day 2 of The Fresh Diet

Day 2 is underway and off to a sweet start. According to the scale, I'm 2 lbs lighter. I'm thinking the diet + 7am runs are worth the extra effort. Yesterday's menu was pretty delicious–dinner/dessert definitely being the highlight. I cut 2 strawberries into about 15 pieces if that's even possible and savored every last bite of chocolate and ricotta. Here's what's on the menu today:

Breakfast: Cinnamon Swirl Multi-Grain French Toast with Fresh Apples and Blackberry Ricotta Cheese

Lunch: Tuna Burger on Whole Wheat Bun with Cucumber and Avocado Salsa

Snack: Artichoke Bottoms Filled with Creamy Cauliflower

Dinner: Stuffed Chicken Asiago & Tarragon with Whole Wheat Linguine Pasta and Roasted Fennel

Dessert: Apple Pistachio Muffin

6 days until Marisa's wedding = Day 1 of The Fresh Diet

The Fresh Diet delivers 3 fresh gourmet meals and 2 snacks to your doorstep daily (for as many days as you purchase). Each day consists of about 1200-1400 calories. They tailor the menu to your likes/dislikes which you store in your virtual pantry prior to choosing your menus (Notice my dislike basket full of meat). With the program I chose, I get 4 choices for each meal and I can choose 2 snacks from about 5 choices. The prices vary depending on which program you select. I luckily snagged a good deal using Groupon last week.

I awoke today to an adorable little green cooler bag outside my front door with my Day 1 food. It's packaged with ice packs so your food stays fresh until you unpack it. While the portions are slightly smaller than I expected, they are pretty tasty and provide a good variety of flavors. On the menu for today is:

Breakfast: Southwestern Style Scrambled Eggs with with Fire Roasted Corn, Fresh Salsa, Bell Peppers, Pepper-Jack Cheese & Nine Grain Toast

Lunch: Asian Style Chicken Salad with Baby Bok Choy, Watercress, Alfalfa Sprouts, Water Chestnuts & Sesame Soy Dressing

Snack: Black Bean & Avocado Wheat Crostini

Dinner: Spicy Chickpea Patty with Cilantro Lime and Green Chillies. with Black Barley Pilaf and Exotic Mushroom Ragout

Dessert: Chocolate Dipped Strawberries with Creamy Vanilla Ricotta Cheese

Almost as good as having a personal chef! Stay posted for details about Day 2 and Day 3. I'm skipping Wednesday to celebrate my anniversary but back on track for Thursday!

Hey blog, I'm back!

So I've been neglecting my blog a little... okay a lot. I attribute it to all the crazy and wonderful things I have going on right now. Blogging unfortunately went to the bottom of my list. My new job at Rent the Runway is off to a great, however exhausting start. I didn't realize how much work I'd be doing in the shoes of graphic designer, art director and creative director. It's been a personal test to see how hard I can push myself, and for that I'm really proud. I'm working more hours than I can count, but finally enjoying the work I do and the responsibility to create branding for such an incredible idea. If you haven't signed up, please do... we have thousands of new dresses and the most amazing accessories. Insider info: cocktail rings are headed our way and a few other sweet surprises :)

This past week I made a promise to myself, to find time again for the things I love... like blogging. So I'm back and more inspired than ever. For my first post back from my mini-blogcation, a list! What's better than a list, seriously. So here's to filling you in on all the random things I'm doing or thinking about.

1. My precious little Lola was spayed yesterday. As cute as she is, I'm not sure we can handle 3 more of her running around this apartment. We had to leave her overnight at the vet. I can only imagine this is what its like leaving your child at a hospital for a night. I couldn't stop thinking about all the other dogs (babies) crying all night and keeping her up. What if she was in pain? Sad. Anyways, I just spoke to the vet and she's doing great and ready to come home! So just as soon as I finish this blog post and get Doug out of bed, we get to go pick up the pup!

2. Stopped in Barnes and Noble yesterday and finally picked up Something Blue, the follow up to my last post about Something Borrowed. I've been so eager to read it, and as part of my "get back to life and what I love" promise, I made sure to go buy it yesterday.

3. Marisa's wedding is only 1 month from today! It's so hard to believe my closest cousin, more like a sister, is getting married. This weekend I'll be attempting to write my MOH speech. For anyone who knows me, this is like the culmination of years of avoiding public speaking. Thank you to "nervous speech com D." I'm going to channel all of your focusing/breathing/relaxation techniques and give a killer speech. I'm all grown up... it's time. I plan to even be funny ;) My friend Jaclyn offered some great advice in her recent post about MOH speeches, after all she is a pro.

4. Speaking of funny, I recently finished Chelsea Handler's Are You There, Vodka? It's Me, Chelsea and she's hilarious. From tales of her first jail experience to her affinity for midgets and affair with a "big red" red-head, I was laughing out loud and finding it almost hard to believe. If you're in the "I'm working so hard I can't concentrate on a serious book" stage like I was, pick it up and read a chapter each morning on the subway. It's the perfect sip of funny for your long day.

5. Doug and I decided we need a break from the city - one long and one short. So for the near future, we're looking at a weekend trip. Any ideas? We received many recommendations from Hamptons and Shelter Island to Mohank and the Cape. I want low maintenance and highly pretty. I can picture it... cute little bed & breakfast type place... short walk to adorable town... pretty beach where Lola can run on the sand and we can chase after her wondering why we brought her along again... If you have any ideas, please send them my way. Longterm, we're thinking Greece, or maybe South America, or South Africa. Thoughts?

6. On Mother's Day, we drove to and from brunch singing great songs from the Carol King/James Taylor compilation cd/dvd. Highly recommend it. I'm thinking of buying tickets to the tour coming up. They are playing 2 nights at Madison Sq Garden in 2 weeks. That's not "so far away."

7. While on my blogcation, I was also on a semi-exercation. (That sounds a little too much like I was hanging out with Linda Blair and Ellen Burstyn.)

What I mean is that I haven't been fully devoted to my pre-wedding (Marisa's) health regimen. By now, I should be 5 lbs skinnier and a whole lotta toned. Oops. As always, this will become a crash diet/workout plan starting sometime next week. I'm thinking another round of BluePrintCleanse may do the trick. After day 1, it was actually pretty enjoyable and I'm kinda obsessed with the Pineapple/Apple/Mint... yum! I'm also really liking my morning runs along the east river. Too bad it happens once, maybe twice a week. Speaking of, does anyone recommend any playlists? I could use some new music... and a personal trainer, thanks.

8. "Rent the Runway" was #5 on google search this week, higher than Al and Tipper's divorce. Just saying...

9. To watch or not to watch. I hear Flash Forward was canceled recently. I gave up on the show somewhere between the creepy masks and the dead crows. Go figure. I'm feeling kind of unsettled about it though. I know the show is over, but I have about 6 episodes unwatched on my dvr. Is Flash Forward worth a rewind? I finished the season of Desperate Housewives this week and it too was pretty creepy. I question how ridiculous the storyline can get, and each season it exceeds my expectations. I think this summer will be devoted to catching up on Modern Family and Parenthood, both of which I LOVE.

10. Finally, I just want to wish everyone a happy summer. When else do you have solid plans booked for almost every weekend the next 3 months. Hamptons, Fire Island, Atlantic City, the Kuros backyard...The Standard Beer Garden, The Frying Pan... it doesn't get much better than this. The summer is heating up, and I kinda like it.

Something Borrowed

On a recent trip home from Vegas, my friends and I were browsing the airport book selections. They gasped when I told them I had not read the Emily Giffin series. So I finally did it. Just finished Something Borrowed and I'm kind of obsessed. In fact, I couldn't put the book down. Rachel's character was so relate-able, and I'm pretty sure I have an imaginary crush on Dex. I may have let out a cheer on the subway when I finished the last few chapters this morning... onto Something Blue :)

GG recently announced the launch of Gilt City (yes of course I am signing up). The site will be similar to Groupon, offering local deals up to 70% off. For those of you familiar with Groupon, it's a great concept. I recently purchased groupons with a few friends to attend byo night at MAKE, a cute pottery shop on the upper east side. I'm also a fan of the "berrywild" groupons, yes I bought 6. Gilt City plans to offer exclusive deals to NYC to start, eventually expanding to other cities. Can't wait to see what they offer...

Breakfast of Champions

I recently read an article on RealAge.com about breakfast foods that burn more fat like eggs (protein), yogurt (calcium and healthy bacteria) and whole grains (fiber). We've all heard that breakfast is the most important meal of the day and I'm a firm believer. While most mornings only allow time for cheerios or greek yogurt, on the occasional Sunday morning I like to cook a nice hearty breakfast. See below for my "breakfast of champions" and recipe for my cereal muffins.

Breakfast of Champions:
*Omelette (1/2 yolks) with mushrooms, spinach and leeks
*Small scoop of farmer's cheese and salsa
*2 cereal muffins warm with a drizzle of honey

Cereal Muffins recipe:
1 apple
10 small carrots
1 egg
1/4 cup vegetable oil
1/2 cup skim milk
1/4 cup honey
1 cup whole wheat flour
small handful of brown sugar
pinch of salt
1 tsp baking soda
1 cup kashi honey cereal
1 cup multigrain cheerios
1 tsp vanilla extract
2 tsp cinnamon
pinch of nutmeg

Blend apple and carrots in food processor. Combine them in a large bowl with oil, milk, honey, baking soda, vanilla extract and egg. Mix well. Add flour, sugar, salt, cereal, cinnamon, and nutmeg and mix again. Pour into greased muffin tins and bake for 20 min on 375, until golden brown. Yields 12 delicious muffins.

Fit for Foodies: Chicago

My trip to Chicago in December proved to be more than just a weekend of site seeing. Prior to the trip, I did my research on the restaurant scene and after much deliberation chose Blackbird for Doug's bday dinner. It was the perfect choice. The restaurant was very minimalistic in decor and the food was excellent, credited to their amazing chefs who have been nominated for multiple awards. Beautifully prepared (small-medium) portions of soups, salads, pastas, seafood and meat graced our table and we left totally smitten with the place. We sat next to 2 chefs who were ecstatic about each course they tried and it made the experience that much more special knowing we were sharing in the fun. Also try their other restaurants The Publican and Avec.

My friend recommended this book to me and I couldn't put it down. Tatiana de Rosnay tells the story of Julia Jarmond, an American born journalist living in Paris, and Sarah Starzynski, a young girl living through the terrifying roundup and deportation of Jewish families in France. It's haunting and profoundly moving, and it will stick with you long after finishing the book. Being Jewish, Sarah's Key really touched me, but I recommend it to anyone who enjoys reading.

My previous post was about Jessica Biel, so it's fitting this one be about Justin Timberlake. I watched the incredible "HOPE FOR HAITI NOW" special organized by George Clooney on Friday night. It's sad that it often takes tragedies like 9/11, Hurricane Katrina, and the earthquake in Haiti to bring people together, but at the same time uplifting to see so many celebrities and others offering their help. I fell in love with the photos of actress Jeri Ryan's wedding recently as I came across them on the photographer's website. Elizabeth Messina is an extraordinary photographer for weddings, engagements, and special moments in life. Her photography is beautiful and well received amongst the stars, including Tori Spelling and Dean McDermott. This set of photos from Ryan's wedding caught my eye and struck me as the "fairytale" wedding. Set against the vineyards and rolling hills of the Loire Valley in France, their wedding was picture perfect. I hope you enjoy the photos and admire Messina's wor k as much as I do.

It's the start of a new year and a new decade. The last 10 years were filled with many great memories and milestones for which I am very thankful. To name a few... getting my license, graduating high school, graduating college, spending a semester in Europe, working 4.5 years for Ralph Lauren, traveling the world in all directions including Israel and Hawaii, living 4 years in NYC, meeting Doug, and all the while sharing these experiences with my best friends and family. 16 to 26 was a good run and I expect even better things to come in the next decade. Can you picture your life 10 years from now?

I saw Joshua Radin play at Webster Hall this week. Not only is he adorable and charming, he is so talented! His voice is soft and sweet one minute, and the next minute he's rockin out with his guitar. I was so happy that he played my favorite song Today. Anyone who's heard this song probably agrees, it is the most beautiful and touching song. I first heard it in July and said this will be my wedding song one day, and after hearing it live I stand by my words. It's amazing! I guess I have good taste because Ellen and Portia had Josh perform this song live at their wedding. There were 2 other highlights to the show... Josh's good friend Zach Braff was there to support him and Josh encored with a Bob Dylan cover. Let's just say it was an up close and personal performance for us. Enjoy (and be jealous)!

I don't always review restaurants, but I had to in this case. Falai gets a giant THUMBS UP! I don't think I can rave enough about the meal I had there last night, and I'm not sure if I want to because this place is a gem and I'd love it to stay that way. Doug took me on a date (awww) and he always lets me pick the place since he knows how much I love discovering good food. I read some amazing reviews for Falai and we decided to try it. Falai is an adorable little spot on Clinton near Rivington. There is a tiny bar with little crystals hanging overhead and maybe 10 tables in the whole place. It's cozy, so simple and so perfect. Onto the food... oh my. The presentation was impeccable and very creative, and the dishes themselves were some of the best I've ever tasted (the couples to the left and right seemed to agree). We savored every moment, all 3 hours of it... from the wine to the appetizers to the pastas to the fish and finally dessert. It was AMAZING! With that said, this is not the place to go if you're the type who likes to bring home leftovers. You will lick your plate clean, like I did :)

I can't stop oohing and aahing over every look on Blake Lively in the November NYLON issue. Holy Sequins! I loveeee the Gucci sequin jacket and the skirt paired with it. Not to mention she's insanely beautiful and can pull off anything she wears. Everything about the shoot is right on.. including her hair. Great Balls of Spinach

2 10oz packages spinach (they're the blocks) (thawed and drained well)
2 beaten eggs
2 cups herb stuffing mix (make sure it's herb flavored, not chicken or turkey)
1/2 cup melted butter
1/2 cup parm cheese (i didn't use this)
dash of garlic powder
dash of salt

Mix all ingredients in bowl and roll in to balls.
Bake 15 minutes at 350.
You can also freeze them and bake for 20 minutes.

Boom Boom Kung Pow Chicken

1lb boneless-skinless chicken breasts (cut into 1” pieces)
1 tablespoon cornstarch
2 teaspoons sesame oil
3 tablespoons scallions (chopped)
3 garlic cloves (minced)
½ teaspoon crushed red pepper flakes
½ teaspoon powdered ginger
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
1/3 cup dry roasted peanuts

Combine chicken and cornstarch in a small bowl and toss to coat. Heat sesame oil in wok over medium heat, add chicken and stir fry 5-7 minutes or until no longer pink inside. Remove chicken from wok. Add green onions, garlic, red pepper flakes and powdered ginger to the wok and stir fry for 15 seconds. Combine vinegar, soy sauce and sugar in a small bowl. Mix well and add the sauce to the wok. Return chicken to the wok and coat with sauce. Stir in roasted peanuts. Heat thoroughly. Top with additional green onions if desired and serve over white rice.

Bennie Ala Vodka & The Jets

2 large cans (28oz) crushed tomatoes
2 8oz heavy cream
1 large can (28 oz) plain tomato sauce
½ lb prosciutto (or bacon)
2 stalks celery
3 carrots
1 stick butter
1 cup grated parmesan cheese
salt & pepper to taste
8 cloves garlic
fresh basil
1 large onion
6 anchovies
¼ cup olive oil
1 cup vodka (optional)

In a food processor chop celery & carrots as fine as possible, put aside. Chop onion and garlic in processor as fine a possible, put in saucepan with anchovies and olive oil and sauté. Add celery and carrots and sauté for a few more minutes. Add crushed and plain tomato, basil and vodka. Add tbsp salt and 1 tsp pepper. Bring everything to a boil and then simmer on medium-low heat, continuously stirring pot. Cut prosciutto or bacon into small squares (as small as possible). In a small saucepan add prosciutto, with 1 stick butter, sauté for a few minutes (do not burn or overcook). Add heavy cream and grated cheese, stir well. Cook for about 5 minutes, stirring constantly. Add entire cream mixture into pot with red sauce. Cook until desired thickness is achieved.

It's been almost a month since I posted and life's been so busy lately. I started sugar flower classes with Ruth Drennan of Ruth Drennan Cakes. She's a big inspiration to me, and I am really excited to finally do this. In our first class, I learned how to make gumpaste roses. Practice makes perfect, but I think I did pretty well for a gumpaste virgin. Next up are orchids (especially excited for this) and marzipan. Will share my creations as they come.

My favorite lunch spot was written up in the New York Social Diary this week. When I started working at Ralph Lauren 4 years ago, everyone would ask me if I wanted to grab lunch at DKNY. I was so confused until I finally asked... Lunch at DKNY? Like the clothing store? To my delight, I learned that there is a small organic cafe called Blanche's upstairs in the Madison Ave DKNY store. I'm addicted ever since. The food is so fresh and the wraps/salads are like no other. My favorites are the veggie burger salad and the blue cheese tuna wrap. They toast the wraps until they are perfectly crispy, yet soft, and they are SO delicious. They also have the best olives I've ever had, supposedly Moroccan. I highly recommend stopping in for lunch or a fresh squeezed juice. This place rocks!

It's that time of year again... you can taste fall in the air, the tents are buzzing at Bryant Park, and all of our favorite tv shows are back. Today is the Ralph Lauren Runway Show for Spring 2010, which means tonight is the infamous all-nighter. Twice a year my team works through the night to put the show/collection online. Stay tuned for details of the show this week...

So with a few hours to spare, I've been catching up on the start of fall tv. Today I watched the premiere of "The Beautiful Life." It's Mischa Barton's comeback show after The OC, and it features a bunch of young models learning the insecurities and competition of the high-fashion world. It's clearly a CW show, but I really enjoyed it... good-looking cast, drama, deceit, blooming romance. I hope they keep it up.

Update to my post: The show was canceled after only 2 episodes :(

Is anyone else addicted to this show? The theme cakes are fun, but my favorite are the beautiful classic wedding cakes. Ever since they featured "The Cake Atelier" with Lauri Ditunno and Ruth Drennan, I am OBSESSED with their wedding cakes. They are truly a work of art. Mar-a-Lago Key Lime Pie

Serves 8

Graham Cracker Crust:

3/4 pound graham crackers

4 Tbsp. granulated sugar

2 sticks melted butter

1/4 tsp. sea salt

Filling:

4 egg yolks

1 can (14 ounces) condensed milk

2/3 cup fresh Key lime juice

1 lime , grated zest

Topping:

1 cup heavy or whipping cream , chilled

2 Tbsp. confectioners' sugar

1/2 tsp. vanilla extract

To make graham cracker crust: Preheat the oven to 325°.

Break up the graham crackers, place in a food processor and process to crumbs. Add the melted butter, sugar and salt and pulse until combined. Press the mixture into the bottom of a 9-inch pie pan, forming an even layer on the bottom, sides and edge. Bake the crust for 10 minutes. Remove from the oven and allow the crust to cool.

To make filling: While the crust is resting, in an electric mixer with the wire whisk attachment, whip the egg yolks and lime zest at high speed until fluffy, or 5 to 6 minutes. Gradually add the condensed milk and continue to whip until thick, 3 to 4 minutes longer. Lower the mixer speed and slowly add the lime juice until incorporated.

Pour the mixture into the crust and bake for 15 minutes, or until the filling has just set. Cool on a wire rack, and then refrigerate for 20 minutes.

To make topping: Whip the cream, confectioners' sugar and vanilla until nearly stiff. Evenly spread the whipped cream on top of the pie, and place in the freezer for 20 minutes prior to serving.

Oprah's Favorite Turkey Burger

This recipe is from Donald Trump's Mar-a-lago, and Oprah says this is the best turkey burger you'll ever taste.

Serves 6

1/4 cup thinly sliced scallions

1/2 cup finely chopped celery

3 Granny Smith apples , peeled and diced

1/8 cup canola oil

4 pounds ground turkey breast

2 Tbsp. salt

2 Tbsp. black pepper

2 tsp. Tabasco® chipotle pepper sauce

1 lemon , juiced and grated zest

1/2 bunch parsley , finely chopped

1/4 cup Major Grey's Chutney , pureed

Sauté the scallions, celery and apples in the canola oil until tender. Let cool.

Place the ground turkey in a large mixing bowl. Add sautéed items and the remaining ingredients. Shape into eight 8-ounce burgers. Refrigerate for 2 hours.

Season the turkey burgers with salt and pepper. Place on a preheated, lightly oiled grill. Grill each side for 7 minutes until meat is thoroughly cooked. Let sit for 5 minutes.

Serve with a side of Mar-a-Lago Pear Chutney and your favorite toasted bread, pita or hamburger roll.

I wish Fashion week was more exciting for me. Four years working for one of the top designers in the world and I've yet to see our show live, and no other shows for that matter. While Lauren Conrad and Rachel Zoe put on their best, I'm prepping for our all-nighter so the world can experience the show and collection online. This is not to say that I don't salivate at the site of gorgeous clothing, and so this year I'm taking Fashion We(e)k head on.
Goal: See at least one live show! Now... who wants to invite me?

NYmag recently ran a teaser where they asked designers to give them one word that represented their new collection. I don't know about you, but I'm kind of excited.

Game Night

A few months ago, my friends got together for our latest potluck... Game Night became a tribute to many of our favorite childhood games from Hungry Hungry Hippos to Scrabble and Twister. No lack of creativity amongst this group. Highlights of the night included our very candid game of rock/paper/scissors, Jill & Jaclyns creepy mind games with Simon Cowell, and EATING.

ON THE MENU:

Crackers in Bed Bean Dip
Go Fish Buffalo Shrimp

Enjoy my recipe for Crabble Cakes:

Serves 4-6
1 pound crab meat
1 full roll of Ritz crackers, crushed
handful of breadcrumbs
2 green onions
1/2 cup chopped bell peppers
1/4 cup mayo
1 egg
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1/2 lemon, juiced
1/4 teaspoon garlic powder
1 teaspoon salt
Dash cayenne pepper
Flour, for dusting
1/2 cup peanut oil
Favorite dipping sauce

I made a few substituions for my first run at these crabcakes. I substituted imitation crab meat (all I could get at the super market) that I chopped quickly in my food processor. It made a great texture to hold together the cakes. I also used my food processor to chop up the onions and peppers real quick. Be sure to only do it for about 3-4 seconds as you don't want the ingredients too fine.

In a large bowl, mix together all the ingredients except for the flour and peanut oil. Shape into patties. For this I used a 1/3 measuring cup to scoop out the patties and then dust generously for flour to avoid sticking. The cakes tend to fall apart at this point so I recommend refrigerating (I did for 24 hours) or freezing them for an hour or two. This will help keep them together.

Next heat the oil in a large skilled over medium heat. When the oil is hot, carefully place the crab cakes, in batches, in pan and fry until browned, about 4-5 minutes. Carefully flip crab cakes and fry on the other side until golden brown, about 5 minutes. Serve warm with preferred sauce... for a delicious sauce mix (to taste) some mayo, lemon juice, worcestershire sauce, hot sauce, and garlic.

Mac+Cheese with Leeks+Gorgonzola

1 pound penne pasta
2 tablespoons unsalted butter, plus 1 tablespoon
1 tablespoon olive oil
3 leeks, thinly sliced
Bechamel Sauce, recipe follows
1/2 cup Gorgonzola, crumbled
1/4 cup grated Asiago
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh oregano leaves
1 tablespoon chopped fresh Italian parsley leaves
Kosher salt and freshly ground black pepper
Special equipment: 9-inch springform pan

Preheat the oven to 375 degrees F. In a large pot of boiling salted water cook the pasta until al dente, drain and set aside. In a skillet over medium heat melt 2 tablespoons of butter and oil and cook the leeks until tender but not browned. In a bowl combine the cooked leeks with the Bechamel Sauce, Gorgonzola, Asiago, thyme, oregano, and parsley. Toss the sauce with the pasta until well coated and season, to taste. Grease a 9-inch springform pan with the remaining butter. Fill the springform pan with the pasta mixture and place on a baking sheet. Bake for 40 minutes. Let rest for 10 minutes before removing from the pan and slicing.

Bechamel Sauce:
1/4 cup unsalted butter
1 clove garlic, smashed
1/4 cup all-purpose flour
3 cups milk
1/4 cup grated Parmesan
1/4 teaspoon kosher salt

Pinch freshly ground nutmeg In a heavy bottomed pot over medium heat, melt the butter and saute the garlic for 2 minutes until fragrant, but not brown. Remove the garlic and discard. Reduce the heat to low and whisk in the flour to make a roux, cook for 4 minutes, stirring constantly to prevent scorching. Heat the milk to just below boiling. Pour 1 cup of milk into the roux, whisking constantly as the sauce thickens. Add the rest of the milk, in 1/2 cup portions, whisking constantly to prevent lumps. Simmer the sauce over low heat for 8 minutes, stirring the bottom of the pot with a spatula to prevent burning. Remove the pot from the heat and stir in the cheese, kosher salt and nutmeg to finish the sauce. Yield: 2 1/2 cups

Sugar Cookie Cupcakes

1 large Sugar Cookie Dough package
2 1/2 sticks (10 ounces) unsalted butter, at room temperature
5 cups confectioners' sugar
1 tablespoon pure vanilla extract
1 to 2 tablespoons milk

Roll the cookie dough into small balls and mold into mini muffin tray cups. Bake until golden and let cool.

In the meantime... In a large bowl, using a mixer, beat the butter on medium speed until creamy, about 1 minute. Add the confectioners' sugar, 1 cup at a time, beating until smooth after each addition. Add the vanilla and 1 tablespoon milk. Beat at high speed until fluffy, adding an additional 1 tablespoon milk if necessary. Decorate with frosting and sprinkles.

Pesto Perfection

20-24 Fresh Basil leaves
¼ cup Parmesan Cheese - grated fresh
¼ cup Pecorino Romano Cheese – grated fresh
¼ Pine Nuts
½ Garlic clove chopped
2 tbsp. Extra-virgin olive oil
Salt – added last only if needed after tasting

Recipe comes from Florence and measurements are approximate. Throw a handful of each ingredient into afood processor and blend until everything is chopped/mixed together. Add more ingredients after according to taste and mix with pasta of your choice. Rigatoni is my fav!

A few months ago, my friends had a Greek/Mediterranean themed Potluck.

ON THE MENU:
Baklava Tartlets
Cheesecake Phyllo Cups
Greek Salad
Orzo
Pizza
and lots of Humus

Enjoy Natalie's Orzo recipe:

1 pound of uncooked orzo
1 cup halved cherry tomatoes
1 large red onion
1 cup sliced pitted kalamata olives
1 (6-oz) jar marinated artichoke hearts coarsely chopped
1 (6-oz ) jar of roasted red peppers, sliced
1 cup of crumbled feta cheese
A few basil leaves
Greek Salad Dressing (I prefer Ken's brand)
Ground black pepper (to taste)

Cook the orzo according to package directions. Slice red onion thinly and sauté in olive oil until the onion slices turn clear/browish. Combine cooked orzo with tomatoes, olives, artichokes, roasted red peppers, and toss. Add feta and sautéed onions and toss so that all ingredients are mixed. Add ground pepper to taste and mix. Add Greek Salad Dressing to taste and toss so that all ingredients are coated (not much dressing will be necessary - the feta cheese adds a lot of flavor). Top with the basil leaves to add some green. Serve either hot or cold.

Magic Cookie Bars

1/2 cup butter or margarine, melted
1 1/2 cups graham cracker crumbs
1 (14 ounce) can Sweetened Condensed Milk
2 cups semisweet chocolate morsels
1 1/3 cups flaked coconut
1 cup chopped nuts
Can add peanut butter or white chocolate chips

Heat oven to 350 degrees F (325 degrees for glass dish). Coat 13x9-inch baking pan with no-stick cooking spray.

Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.

Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.

Corn Casserole

1 can whole kernel corn, drained
1 can cream corn
1 (8-ounce) package corn muffin mix (Jiffy)
1 cup sour cream (lowfat)
2 tsp Splenda
1/2 cup (1 stick) margarine, melted
2 eggs slightly beaten
Can add 1 cup of shredded cheddar

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, eggs and melted butter. Pour into an ungreased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Orecchiette With Mini–Turkey Meatballs

Serves 6
* 1 pound orecchiette
* 1/4 cup plain breadcrumbs
* 1/4 cup chopped fresh flat-leaf parsley
* 2 large eggs, lightly beaten
* 1 tablespoon whole milk
* 1 tablespoon ketchup
* 3/4 cup freshly grated Romano
* 3/4 teaspoon salt
* 3/4 teaspoon freshly ground black pepper
* 1 pound ground turkey
* 1/4 cup olive oil
* 1 1/2 cups low-sodium chicken broth
* 4 cups cherry tomatoes, halved
* 1 cup freshly grated Parmesan, divided
* 8 oz bocconcini (small mozzarella balls), halved
* 1 cup chopped fresh basil leaves, divided

Bring a large pot of salted water to a boil over high heat. Add orecchiette and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes.

In a medium bowl, stir together breadcrumbs, parsley, eggs, milk, ketchup, Romano, salt and pepper. Add chicken and combine well. Using a melon baller (or a teaspoon measure), roll the seasoned chicken into 3/4-inch mini-meatballs.

Heat oil in a large skillet over medium-high heat. Working in batches, add the meatballs and cook without moving until brown on the bottom, about 2 minutes. Turn meatballs and cook about 2 minutes longer. Add broth and tomatoes and bring to a boil, using a wooden spoon to scrape up the brown bits that cling to the bottom of the pan. Reduce heat to low and simmer until the tomatoes are soft and the meatballs are cooked through, about 5 minutes.

Drain orecchiette, reserving about 1 cup of the cooking water. Transfer to a large serving bowl and add 1/2 cup Parmesan. Toss to coat orecchiette lightly, adding some of the reserved pasta water to help make a sauce. Add the meatball mixture, bocconcini and 1/2 cup basil and combine. Garnish with remaining Parmesan and basil.

2-3 eggplants
1 lb ricotta
1 lb mozzarella – either grated or cut into cubes
2 Tb parmesan cheese
2 tsp parsley
salt & pepper
tomato sauce
olive oil

Slice eggplant in ¼ inch slices. Spread on a baking sheet in one layer. Sprinkle with salt and pepper. Drizzle a little oil on top. Bake at 350 degrees, l turning 1 time after about 5 mins. Cook for about 5 more mins. Repeat with rest of egg plant.

Mix ricotta with 2 TB parmesan, parsley, salt and pepper to taste.

In corning ware pan, spray non stick spay. Spread a little tomato sauce on botton. Put a layer of egg plant on bottom. Put spoonfuls of ricotta mixture on layer. Sprinkle mozzarella, parmesan and spread some tomato saude. Repeat adding another layer of eggplant. On top layer, put tomato sauce and mozz.

Bake for about 45 mins at 350 degrees

Cheesecake Phyllo Cups

* 4 ounces reduced-fat cream cheese
* 1/2 cup reduced-fat sour cream
* Sugar substitute equivalent to 2 tablespoons sugar
* 1 teaspoon vanilla extract
* 2 packages (2.1 ounces each) frozen miniature phyllo shells, thawed
* 1 can (11 ounces) mandarin oranges slices, drained
* 1 kiwifruit, peeled, sliced and cut into quarters

In a bowl, whisk together the cream cheese, sour cream, sugar substitute and vanilla until smooth. Pipe or spoon into phyllo shells. Top each with an orange segment and kiwi piece. Refrigerate until serving. Yield: 2-1/2 dozen.

Baklava Tartlets

Want a quick treat that's delicious and easy to do? These tartlets will do the trick. You can serve them right away, but they're better after chilling for about an hour in the refrigerator.

* 2 cups finely chopped walnuts
* 3/4 cup honey
* 1/2 cup butter, melted
* 1 teaspoon ground cinnamon
* 1 teaspoon lemon juice
* 1/4 teaspoon ground cloves
* 3 packages (1.9 ounces each) frozen miniature phyllo tart shells

In a small bowl, combine the first six ingredients; spoon 2 teaspoonfuls into each tart shell. Refrigerate until serving.

Coconut Cupcakes

3/4 pound (3 sticks) unsalted butter, room temperature
2 cups sugar
5 extra-large eggs at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoons pure almond extract
3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup buttermilk
14 ounces sweetened, shredded coconut

For the frosting:
1 pound cream cheese at room temperature
3/4 pound (3 sticks) unsalted butter, room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
1 1/2 pounds confectioners' sugar, sifted

Preheat the oven to 325 degrees F. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on high speed until light and fluffy, about 5 minutes. With the mixer on low speed, add the eggs, 1 at a time, scraping down the bowl after each addition. Add the vanilla and almond extracts and mix well.

In a separate bowl, sift together the flour, baking powder, baking soda, and salt. In 3 parts, alternately add the dry ingredients and the buttermilk to the batter, beginning and ending with the dry. Mix until just combined. Fold in 7 ounces of coconut.

Line a muffin pan with paper liners. Fill each liner to the top with batter. Bake for 25 to 35 minutes, until the tops are brown and a toothpick comes out clean. Allow to cool in the pan for 15 minutes. Remove to a baking rack and cool completely.

Meanwhile, make the frosting. In the bowl of an electric mixer fitted with the paddle attachment, on low speed, cream together the cream cheese, butter, and vanilla and almond extracts. Add the confectioners' sugar and mix until smooth.

Frost the cupcakes and sprinkle with the remaining coconut.
